Tips for Storing Food
Eggs and cheese
Store eggs in their carton on a refrigerator shelf, not the door. They can be stored for two to five weeks. Remember to check the "use by" date that's stamped on the carton.
Soft cheeses like ricotta and Brie stay good in the refrigerator for 1 week, but they don't freeze well. Unopened packages of cheddar, Swiss and other hard cheeses can be stored in the refrigerator up to 6 months. They keep for 3 to 4 weeks after opening. You can also freeze hard cheeses for 3 to 6 months.

Produce
Not all produce should be stored in the refrigerator. Keep tomatoes, avocados, eggplants and citrus fruits at room temperature. Potatoes shouldn't be kept in the fridge either; put them in a brown bag and store in a cool, dark place. After rinsing and drying greens, store them in plastic bags in the crisper. Also, place fresh greens, broccoli, corn and green beans in plastic bags in the crisper as well. Don't store fruits near greens to prevent fruits from spoiling.
Refrigerating and freezing meats, fish and poultry
When storing uncooked meat, fish, and poultry in the refrigerator, place wrapped packages in a container to prevent them from dripping. Cook or freeze beef and pork within 3 days. Freeze or cook fresh fish, poultry, and ground meats in 1 to 2 days. Meat and poultry that are to be used within a couple of weeks can be frozen in store packaging as well. For longer storage, rewrap package in a plastic freezer bag, airtight foil, plastic freezer wrap or freezer paper.
Defrosting
The USDA says that the three safest ways to defrost food are: in the refrigerator, in cold water, or in the microwave. Defrosting food in the refrigerator is the best method. If using cold water, place food in a plastic bag and submerge in water. Change the water every half hour. Cook food immediately, after defrosting in the microwave.
Preventing freezer burn
While wrapping food for storage, press out as much air as possible before freezing. If you freeze a lot of food, consider getting a vacuum sealer. These appliances quickly remove air and prevent freezer burn.
Leftovers
Do not leave food out at room temperature for more than two hours (one hour if the temperature is above 90°F). When storing leftovers, divide food into small portions and put them in shallow air-tight containers in the refrigerator. Freeze or use within four days. Leftovers can be stored in the freezer for two to three months.
